Gazpacho

Sometimes the stress of a move, home improvements or life can take a toll on the immune system. When those little life stressers plague your body in the summer, chicken noodle soup and hot tea just won’t cut it.

I have a great summer time “feel better” soup I love when I’m feeling run down and the temperatures are soaring. Ice cold gazpacho.

The secret here is the extra cloves of medicinal garlic and red onion. Both boost the immune system and have other amazing health benefits including detoxing the body,  anti-inflammatory properties and a prebiotic for your colon. A perfect health kick for what ever ails you.

There are many fantastic recipes available online but this one is quick, easy and you most likely already have all the ingredients on hand. Add more or less of any of the following ingredients but please don’t mess with the garlic or onion.

Ingredients
  • 6 Tomatoes
  • Green Pepper
  • Large Red Onion
  • Cucumber
  • 4 cloves of garlic
  • 23 oz of Tomato Juice
  • ¼ cup red wine vinegar
  • ¼ cup olive oil
  • Cracked Pepper
  • ½ Tablespoon Kosher Salt
Instructions
  1. Peel cucumbers and garlic. Chop all vegetable and place into the blender with remaining ingredients. Blitz until desired consistency.

Feel free to enjoy this gazpacho when you are feeling healthy too. Just be sure to use breath mints.
